Prepare lettuce, cabbage, carrots, pepper, onion and cucumber
In a saucepan bring water to the boil and add quinoa and salt. Boil for 5 minutes. Turn heat to low and simmer for about 15 mins. Remove from heat and fluff with a fork. (If you are using part cooked quinoa, cook according to packet instructions)
Steam or boil peas for 7-10 minutes
While the above is cooking, in a small jug, mix together all the dressing ingredients
Drain excess water from quinoa
Serve in layers: lettuce, quinoa, peas then remaining salad ingredients. Top with dressing
Can be served at room temperature or chilled.
I have also made this with a quinoa/bulgur mix.
