Chop apple into small pieces. On the hob, place in a saucepan with 1/2 cup water and cook until apples are soft.
Meanwhile, in a bowl mix all the remaining ingredients.
When apples are cooked, blend to make an apple sauce. Mix with the rest of the ingredients. (The mix should be fairly moist. if the consistency feels too dry, add small amounts of water until it has no dry spots but take care not to oversoak it.)
Spoon into a baking tin (a small loaf tin is ideal). Place in oven for approx 20 mins. I have a fan assisted oven so cooking time may vary. Cake is ready when slightly risen and bounces back when you press the top with your finger.
This recipe would also work well with added raisins.
For convenience, you could use a jar of apple sauce instead of making your own.
