Instructions
  1. Remove pits from dates.
  2. Place dates and sunflower seeds in blender. Blend until mixed into a sticky dough. Approx 5 mins.
  3. Meanwhile, melt chocolate in a bowl over a saucepan of boiling water. When melted, remove from heat to cool.
  4. When date/seed mix has finished blending, if it is excessively oily from the seeds, blot with kitchen towel to remove excess oil.
  5. Roll mix into a thin layer between 2 sheets of greaseproof paper, then cut into approx. 20 squares. Place them closely together on greaseproof paper.
  6. Spread melted chocolate thinly over each slice.
  7. Place in freezer for approx 30 minutes to set. Remove from freezer and store in fridge in a sealed container.
